I am generally hesitant about ordering quesadillas at a bar or pub. Mainly because it usually turns out to be a soggy affair – the bottom layer of 'dilla succumbing to the overwhelming onslaught of sloppiness contained within. But the one pictured above was on the money. Quesadilla is a German word which means "when Mexicans try to make pizza". My friend Marc makes them quite often. He's not Mexican, but they still come out good.
